Its April and Chase and I just celebrated our 14th Year Anniversary being together and also our 4th Year Engagement! You are probably thinking; Wow! Long time! Quick background story about us… Met Chase when I was 17 and he was 19 years old. Even though we went to different high schools, I always tell people we are high school sweethearts. That counts, right? We have been together ever since!
We take our time on everything, as you may already guess. Got engaged on our 10th year anniversary and I have just taken my time planning our wedding since we also just built our first home and was still getting settled in. Three years later, the pandemic hit. Fast forward to now, we are on our 3rd rescheduled date of our special day. Our date is so important to us. Its our anniversary date, his proposal date and so we decided our wedding date should be the same. So we have just had to push it the following year every time. Its okay. 2022 will be our year! Fingers crossed!
And so here we are, celebrated our “Would Have Been Wedding Day Again” the best way possible… by indulging in some amazing, velvety, smooth and just oh so yummy homemade chocolate truffles! These are crazy easy to make and they are so gorgeous too! Thought I would share this fabulous and simple recipe with you guys!
Perfect for any occasion or party! Pile your chocolate truffles up into a pyramid and plate it on your favorite platter or cake holder. It gives off that simple and elegant look! I topped mine with these little anniversary flags I made to make it more fitting for our occasion.
*This chocolate truffles recipe makes about 40 truffles.
ingredients
- 1 cup chopped dark chocolate
- 1/2 cup heavy cream
- 1 tbsp butter
- 1 tsp vanilla extract
directions
- In a microwave safe bowl, melt dark chocolate, heavy cream, butter & vanilla in the microwave for 30 secs.
- Stir until combined & smooth.
- Cover and refrigerate for at least 1 hour.
- Form into 1 inch balls.
- Roll and coat with desired toppings
Toppings suggestions
- Pistachios
- Coconut Shreds
- Cocoa Powder
- Powdered Sugar
- Lemon Zest (on top)
- Hazelnuts
- Almonds
- Walnuts
- Crushed Oreos
- Toffee Crumbs
If using different types of chocolates, consistencies are different. So measure accordingly.
- Milk chocolate, use 1 1/4 cups of chocolate instead.
- White chocolate, use 1 1/2 cups of chocolate instead.
