Pumpkin Bundt Cake With Chocolate Chips & Poppy Seeds! Yes, you read that right! It is already fall season and aside from fabulous fall outfits, my next favorite thing about fall are the baked goods! I am not much of a pumpkin spice latte drinker (I know, shocker!) but Chase loves it so much! Although anything pumpkin dessert, I am all over it! I recently whipped up this amazing pumpkin dessert recipe and it is all the fall feels! I absolutely love how it spreads the aroma of fall all around the house with all that pumpkin spice. This is just such a feel good recipe. So let us jump right in! Visuals and recipe below!

batter INGREDIENTS
- 2 1/2 cups flour
- 3/4 tsp baking powder
- 1 tsp baking soda
- 1 tbsp pumpkin pie spice
- 1/2 tsp salt
- 3/4 cup brown sugar
- 1 cup white sugar
- 1 cup vegetable oil
- 1 can (15 oz) pumpkin puree
- 2 tsp vanilla extract
- 3 large eggs
- 1/2 cup milk chocolate chips (or your choice of chocolate – white or dark)
- 1 tbsp poppy seeds
Glaze & toppings Ingredients
- 2 cups powdered sugar
- 4 tbsp milk
- 1 tsp vanilla extract
- 1/2 tbsp poppy seeds
- 1/2 cup chopped hazelnuts (or your choice of nuts)
DIRECTIONS
- Preheat oven to 350F degrees.
- Grease bundt pan.
- In a large bowl, combine and whisk together flour, baking powder, baking soda, pumpkin pie spice and salt.
- In a separate large bowl, mix together brown sugar, white sugar, vegetable oil, pumpkin puree, vanilla extract and eggs until smooth.
- Add in dry ingredients into wet mixture. Mix until smooth.
- Stir in chocolate chips and poppy seeds.
- Pour batter into greased bundt pan.
- Bake in the oven for 60 mins.
- Let cool for 15 mins.
- To make the glaze, stir in powdered sugar, milk and vanilla extract until a smooth consistency.
- Pour glaze over cooled Pumpkin Bundt Cake With Chocolate Chips & Poppy Seeds.
- While glaze is still wet, immediately sprinkle more poppy seeds and nuts on top for a finishing touch.
Tips
- After mixing in the chocolate chips and poppy seeds in the batter, do not wait to place it inside the oven. Chocolate chips will have time to settle on the bottom of the bundt pan if set aside.
- Sprinkle a few more chocolate chips and poppy seeds on top of the batter right before baking. This helps add more chocolate chips and poppy seeds to bake throughout the cake.
- If making the glaze ahead of time or while waiting for the cake to finish baking and cool, the glaze may harden when you are ready to pour over the bundt cake. Use a microwave safe bowl or measuring cup when mixing your glaze. You may then place the bowl or measuring cup in the microwave for 20 seconds to melt and help loosen the glaze making it easier to pour over your bundt cake when ready. Make sure to whisk the glaze before pouring over the bundt cake.
- Adding nuts on top of the glazed cake adds a little bit of crunch to the cake. You may use any kind of nuts you prefer or skip it completely. Pecans are usually well paired with pumpkin desserts but I love hazelnuts and that’s why I chose to use them as my finishing touch instead.
